Fried Venison Backstrap

Delicious way to enjoy venison!

Ingredients:
1 (2 pound) Venison backstrap, cut into 1/4 inch thick slices
2 1/2 cups milk
2 Tablespoons hot pepper sauce
4 Eggs
2 Cups all-purpose flour
2 Tablespoons salt
1 Tablespoon ground black pepper
3 Cups vegetable oil for frying
1 Box of regular Panko
2 Tablespoons Worcestershire Sauce
1 Cup of Kethchup

There are so many ways to process your game. You can turn it into polish sausage, summer sausage breakfast sausage , hamburger,steaks . jerkey and on and on etc. So many ways. My personal favorite is getting the backstrap and deep frying it. When you get my  backstrap I take off that white inner skin it has and I make sure it is all off. I get the backstrap and I cut 1 inch pieces and then I cut those in half  I have my frying pan ready with some cooking oil. Here is what you need crack open 4 eggs and scramble them up. In another bowl get 2 cups of flour and one box of regular Panko and mix together. I then get my deer nuggets ,that's what I like to call them soak them in the egg and then mix them in the flour and then fry them up until they are floating and are golden looking. People always ask if I marinate the deer meat and I don't. But here is what I do, Get a cup of ketchup and and 2 tablespoons of Worcestershire sauce and some tabasco to your liking and if you like some lemon pepper that is my special dipping sauce.Try some like this next time your thinking of cooking it up another way.

Summer Ceviche

Great summer recipe, perfect as an appetizer!

Ingredients:

4 fresh speckle trout fillets
6 limes
3 Roma tomatoes
1 small white onion
1/4 bunch of cilantro
1 Serrano pepper (remove seeds)
Celery salt, lemon pepper, ketchup, Worcestershire sauce.

Cut fillets in to small pieces as the size of dime, little squares, cut limes and squeeze the juice,of course, putting everything in a large bowl, mix up fish and juice and put in refrigerator for 4 hours and every hour pull out of fridge and mix up fish and juice.4 hours layers add chopped up veggies and then add a couple of sprinkles of celery salt and lemon pepper, then add 4 tablespoons of ketchup and 2 tablespoons of Worcestershire sauce mix up all together and last ingredient is dice avocados at least one.. Eat with crackers and add Tabasco and a Cold Beer!! Mmmm Mmm...Enjoy!!
