Great summer recipe, perfect as an appetizer!


Duration: 5 hours           Serves: 4
  • 4 fresh speckle trout fillets
  • 6 limes
  • 3 roma tomatoes
  • 1 small white onion
  • 1/4 bunch of cilantro
  • 1 Serrano pepper
  • celery salt
  • lemon pepper
  • ketchup
  • Worcestershire sauce
  • 1 avocado


  1. Cut the fish fillets into small pieces (the size of dime).                  
  2. Squeeze all the limes into a large bowl.                                             
  3. Put the fish pieces in the large bowl with the lime and refrigerate for 4 hours. Pull out the bowl every hour and mix the fish in the lime juice.                                                                       
  4. Chop up the tomatoes, onion, cilantro and the serrano pepper (remove seeds). Add to the bowl and mix.                                      
  5. Add a couple of sprinkles of celery salt and lemon pepper to taste. Add 4 tbsp. of ketchup and 2 tbsp. of Worcestershire sauce.                                                                                               
  6. mix up all together and your diced avocados. Eat with tortilla chips or crackers. Mmmm Mmm...Enjoy!!
